Stuffed Portobellos for Breakfast: 2 portobello mushrooms (stems cut), 2 large eggs, 1 TBSP olive oil, fresh dill, rosemary, basil (herbs chopped), salt and pepper to taste — Drizzle olive oil on portobellos and season. Place them on greased baking sheet, sprinkle herbs on top. Crack open eggs and carefully put one inside each mushroom. Bake for 10-12 minutes at 300° F (150 C).

Berrylicious Microwave Minute Muffin. Take a little less than a quarter cup of quick oats, 1 egg, a small handful of blueberries, and some brown sugar or Stevia (if you like sweet), and mix it all up in a coffee mug. If you want your muffin a little moist a tablespoon of plain soymilk or almond milk will do it. Then place in the microwave for 1 min. Watch it carefully—this could overflow! If the muffin top does not look firm, place back in 30 sec. at a time. Once ready, flip mug upside-down.

Tomato Paste Saver: Most recipes call for only a small portion of tomato paste -- you use a tablespoon or two, and the rest invariably goes to waste. To save the remainder: Carefully open both ends of the can with a can opener. Remove one metal end, and discard it. Leave the other in place. Wrap the entire can in plastic wrap, and freeze overnight. The next day, use the metal end to push the frozen paste out the open end.
