Stuffed Portobellos for Breakfast: 2 portobello mushrooms (stems cut), 2 large eggs, 1 TBSP olive oil, fresh dill, rosemary, basil (herbs chopped), salt and pepper to taste — Drizzle olive oil on portobellos and season. Place them on greased baking sheet, sprinkle herbs on top. Crack open eggs and carefully put one inside each mushroom. Bake for 10-12 minutes at 300° F (150 C).

Berrylicious Microwave Minute Muffin. Take a little less than a quarter cup of quick oats, 1 egg, a small handful of blueberries, and some brown sugar or Stevia (if you like sweet), and mix it all up in a coffee mug. If you want your muffin a little moist a tablespoon of plain soymilk or almond milk will do it. Then place in the microwave for 1 min. Watch it carefully—this could overflow! If the muffin top does not look firm, place back in 30 sec. at a time. Once ready, flip mug upside-down.

Tomato Paste Saver: Most recipes call for only a small portion of tomato paste -- you use a tablespoon or two, and the rest invariably goes to waste. To save the remainder: Carefully open both ends of the can with a can opener. Remove one metal end, and discard it. Leave the other in place.
