It's a little known fact that I do not "look-up" to many people. It's not because I'm overly tall.. It's just that I see all people as people, nothing more and nothing less. However, every once in a while, a person will speak TO me. Almost like they opened up my brain and knew exactly what to say in order to inspire me - this guy, happens to fall under THAT category. Trey Ratcliff. I only wish I would have heard about him sooner; however, I think I'm hearing about him just at the right time. Thanks Trey for making me realize all my stumbling is okay and that I'm just setting up for greatness (somewhere down the line eventually one of these days.. haha).

I'm so bummed. My aunt bought me one of these during her trip up to the Bay Area. Distracted, excited my aunt was visiting, stuffy and apparently somewhat brain dead I stuffed it in my fridge and figured it would be devoured in the next 2-5 days. Those 5 days flew by and I forgot all about! A WHOLE MONTH passed and then behold, the coffee cake resurfaced! Sadly, the coffee cake is no longer good since it hadn't been frozen :( Ah well, time for another trip to Mariposa. And also, time for a magic fridge that yells at me when my food is about to expire!

Nonceliacas Manai: Otherwise known as the non-celiac men who live in my household. The nonceliacas manai are known to inhale everything from Mariposa coffee cakes to Miglet's cupcakes without even blinking. They are also commonly associated with the nonceilacas woman who has also been known to devour a gf cake or other baked good while I'm not looking. Moral of the story: protect your GF treats -- you never know when a nonceliacas is lurking in the shadows. Or better yet, buy multiples of any of your tasty GF goodies!

Mariposa Baking makes one that's a quarter of the size, BUT theirs does not contain xanthan gum. Interesting statement by Shauna about people being "entitled" by stating their disapproval of this product containing xanthan gum. I'm not so sure people are being entitled, I think they're just letting others know that may have the allergy to avoid the product. If I've learned anything while having Celiac it is that every Celiac is different and they're usually quick to help those with additional food allergies by stating which products are safe and which aren't. Not everyone can take the risk of having even "just a little" of a product containing one of those additional allergens. Just saying.
